Ghost pepper hot sauce recipe Ingredients for 4 people:
- 500 g of mango (about 4 fully ripe)
- 100 g of brown sugar or preferably raw sugar
- 2 fresh Ghost pepper (bhut jolokia)
- 1 clove of garlic
- 1 lemon or 2 limes
- 1/2 tablespoon of apple cider vinegar
- 1 pinch of salt
Spices for our ghost pepper sauce , about 20 g each (I put a list from which you can choose, or you can use them all or try different combinations):
- fresh grated ginger
- turmeric
- cumin
- sultanas
- cardamom
- mustard seeds
- chopped coriander
Method
In a large enough saucepan, put the peeled and diced mango, add some lemon or lime wedges, the sliced ghost pepper and the vinegar. Cook over moderate heat for about 10 minutes, then add the sugar and salt and continue to cook on a low flame for another 30 minutes, until the mixture is homogeneous, adding water from time to time. Finally add all the spices by continuing to mix, let cool and serve in small bowls.
